A new year brings new ideas, but the idea of using vessels other than oak for wine production is an oldie but goodie. While most wines are famous for their baking spice, woody nature, a large majority of varietals never see the inside of a barrel. It's cost effective, clean, and saves a tree (#savetheplanet).
